Sonny Pache

Acclaimed for his experience at Columbus Fish Market and M, Executive Chef Sonny Pache is exploring new ventures at Ocean Prime, a Modern American Supper Club that showcases a large selection of prime seafood and steaks, as well as hand-crafted cocktails and world-class wines.  Chef Pache will show us his innate talent for preparing fine cuisine with Ocean Prime’s eclectic menu that offers a balance between traditional and inventive new classics from both a great seafood restaurant and a conventional steakhouse.  Sonny has always had a passion for food and credits his mother for sparking his interest in cooking.  Raised in Southern California, Sonny’s mom was constantly experimenting with new recipes and ingredients while he grew up. 

“When I was young, my family rarely went out to eat,” Sonny says.  “Even on special occasions my mom liked to have big cookouts or get-togethers because she loved cooking for them.” Sonny believes that his mother’s passion for cooking eventually trickled down to him.

Sonny’s favorite style of cooking is Pan Asian, and he loves to work with seafood.  Growing up in California had a big impact on his cooking style, and both fish and rice were always a staple in his Filipino household.  Sonny also lists salt and tasting spoons as his vital kitchen equipment and emphasizes the importance of tasting your food before it is served in order to make sure it is seasoned properly and perfectly.

Sonny’s culinary career began at age 18. His long line of cooking experience includes working at the Columbus Fish Market for two years and of course his two years of experience with M.  His most valuable lesson he learned from his time spent at M was from his coworkers who taught him something new every single day and were always a constant reminder of why he does what he does.

When Sonny isn’t in the kitchen, he enjoys traveling, fishing and going to the beach. He can also be found barbequing or playing corn hole with friends.  Sonny’s advice for aspiring chefs: “Always keep your eyes and ears open. You never know when you may learn something new.”
